{Crunchy} Honey Chicken

So I made this actually

{a long time ago}

but as you can see haven’t been the best

blogger.

Looking for a good Chineese recipe

{Crunchy} Honey Chicken

{Crunchy} Chicken

Dinner is served!

1 pound thinly sliced, boneless, skinless chicken breasts

2 egg whites

1/3 cup cornstarch (or flour – for dredging)

1 cup broccoli florets

1/2 red pepper, thinly sliced

a handful of sugar snap peas (about 3/4 cup)

1 clove garlic, minced

3 tablespoons olive oil

1 tablespoon soy sauce

1/4 cup honey

salt and pepper to taste

Prepare and slice all veggies – feel free to add whatever you would like. In 2 separate bowls, add the egg whites (lightly beaten) and the cornstarch or flour. (The cornstarch will yield a “crispier” chicken). Heat a large skillet over medium-high heat and add 1 tablespoon olive oil. Add veggies with a sprinkle of salt and pepper and saute for about 5 minutes, until softened. Add in soy sauce and garlic and stir so veggies are coated, about 60 seconds. Remove from skillet and set aside in a bowl.

Cut chicken into 1-inch pieces and season with salt and pepper. Heat the same skillet (or you can use a different one, I just use the same to make it easier) over medium-high heat and add remaining olive oil. Dip chicken pieces in egg whites and then lightly dredge in cornstarch. Add to the skillet and let brown for 2-3 minutes, then flip. Continue with remaining chicken pieces, and do so in batches if needed.

Once chicken is cooked, add veggies back in the skillet. Add honey and thoroughly mix to combine. Taste and season with salt, pepper, additional honey or soy sauce. Serve with rice.

The last {48} hours

Have been a Whirlwind!

It’s that time of the year.

As teachers you measure years

by school years.

School ended last week.

{yes, much later then the mid-west!}

But the last {48} hours have been a

blur.

It all started Thursday night

with a trip to

DISNEYLAND!

The hubster and I were chaperones

for Grad Night!

{Grad Night= thousands of high school Seniors

at California Adventure and Disneyland

9:00p.m. to 6:00a.m.}

I’m not sure who had more fun.

I can’t tell you that last time I was at D-Land

the hubby went 12 years ago

{as a freshman in high school}

Weekend {Slow}

Everyone loves slow weekends!

That’s what we had…

L.O.V.E.

Friday night we hit up

dinner and

a show!

{the hubby’s first ever play}

We saw Mansfield Park

{a student/family friend was in it}

She did a fabulous job!

Saturday was full of

naps.

crafts.

{will be posted later}

dinner.

movie.

Sunday was full of

church.

grocery shopping.

Something Borrowed.

running.

rest.

Now it’s Monday.

I miss the {slow} weekend.

New Recipe {Baked Taquitos}

Like you might know

i.love.to.cook.

{and bake}

I try really hard to try a new recipe

once a week.

Most the time I don’t post about them

but it is a must!

I found it on one of my

obsessions.

with a few changes

I was in love.

I didn’t follow the recipe to the “t”

I used

green pepper instead of red.

chili powder instead of cayenne pepper.

white onion instead of green.

but they were still delish!
